The wine is made from the local red grape Brachetto, most commonly in frizzante (lightly sparkling) or spumante (fully sparkling) styles, though it can also be produced as a still red wine or as a passito, a sweet wine made from dried grapes., The climate, characterized by harsh winters and warm summers, creates ideal conditions for the Brachetto grape to develop the aromatic compounds and natural sugars that define its unique character. It is typically low in alcohol and slightly sweet, with a bright ruby-red color and a highly aromatic bouquet of rose petals, ripe red berries, and hints of cola. To preserve these fresh fruit aromas, the sparkling versions are generally produced using the Charmat or Martinotti method, where the second fermentation occurs in pressurized tanks.
